Pretty Thai Satay

  • 1 pound of chicken, beef or extra firm tofu cut into strips

Marinade

  • 4 cloves garlic, crushed and chopped
  • 1 tablespoon brown sugar
  • Juice of 2 limes
  • 1 tablespoon fish sauce
  • 1 teaspoon tamarin pulp dissolved in 2 tablespoons hot water
  • 2 tablespoons vegetable oil

Sauce

  • 1 cup crunchy peanut butter
  • 1 onion finely chopped
  • 1 cup "Thick" coconut milk
  • 1 tablespoon brown sugar
  • 2 teaspoon cayenne pepper
  • 1 teaspoon crushed red chile peppers
  • 1 stalk lemon grass, finely chopped
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce

Place all marinade ingredients in a blender until smooth. Place chicken, beef and/or tofu in SealSaver® Vacuum Container. Pour marinade over items in container, stir or shake to coat and then vacuum seal. Marinate for 20 minutes, shake, release vacuum and then re-vacuum seal for an additional 10 minutes. If not using SealSaver, marinate overnight.

Place marinated ingredients on skewers and grill. Heat peanut sauce over medium heat, stir frequently and do not allow sauce to boil.

Serve with Pretty-Smith Sauvignon Blanc or Pretty-Smith Merlot.
